This recipe is reminiscent of our stay in Boracay Island. I would take my daughter to dine out on paydays. We had so many favorite restaurants on the island but there are two budget-friendly that stood out for us. One was Blue Jade Cafe located in station 2 at the back of D'Mall near the wet market. My daughter especially loved their Pasta Amatriciana. And so, I adapted the recipe according to our budget on the island for my daughter to enjoy every once in a while and made specially by me for my unica hija. Here is a Filipino Style Spaghetti Amatriciana! Instead of using pancetta, which can only be found in specialty deli shops in the Philippines, I use the more accessible bacon. Instead of red wine, I use the chicken or beef bouillon cube and the water from cooking the noodles to make it a little budget-friendly. So here is how we make Spaghetti Amatriciana here at home in Pinoy style! I hope you like it!
INGREDIENTS:
1 cup chopped bacon
1/4 cup roughly chopped onions
1/4 cup chopped garlic
2 tablespoons tomato paste
8 to 10 medium-sized diced fresh ripe tomatoes
1 chicken or beef bouillon cube
salt to taste
1 teaspoon pepper
1/2 tablespoon Italian seasoning (I use McCormick)
500 g spaghetti noodles
